Snaaaaack Time!

Does it ever feel like your kids eat the same thing (i.e. goldfish and graham crackers) for snack time everyday?  It can be tough to keep snacks interesting especially when it feels like snack time is happening alllll day long!  Recently I could tell that my son Jonas was getting sick of eating the same things for snacks everyday, so, we decided to change things up!  We tried some new healthy and easy snack recipes that were a hit with him, so I wanted to share with you all.

Avocado Banana Pops

Ingredients

  • 1 ripe avocado
  • 1 ripe banana
  • 1/2 cup greek yogurt

Instructions

  • Blend all ingredients until smoothavocado banana pops 3.JPG
  • Spoon mixture into Popsicle moldsavocado banana pops 4.JPG

Frozen Yogurt Covered Blueberries

Ingredients

  • Blueberries (fresh or frozen)
  • Greek yogurt

Instructions

  • Line a cookie tray with parchment paper
  • Line up blueberries on trayyogurt blueberries 1.JPG
  • Spoon yogurt on blueberries to cover.  Yes, they won’t look very pretty!yogurt blueberries 2.JPG
  • Freeze for several hours until frozen

Carrot Cheese Crisps

Ingredients

  • 1 cup grated carrots
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 2 tablespoons ground rolled oats
  • 1 tablespoon ground flaxseed

Instructions

  • Preheat oven to 375
  • Peel and grate carrotscarrot cheese crisps 1.JPG
  • Place grated carrots in a microwave safe dish with water and microwave (covered) for three minutescarrot cheese crisps 2.JPG
  • Drain water and squeeze out remaining water using paper towels
  • Place rolled oats and ground flaxseed in food processor and grind
  • Mix carrots, oat and flaxseed mixture, shredded cheese, and eggs in a bowlcarrot cheese crisps 3.JPG
  • Place spoonfuls of the mixture on parchment lined cookie sheet.  Use the back of a spoon to flatten each onecarrot cheese crisps 4.JPG
  • Bake for 17 – 20 minutes until edges are golden brown and crispcarrot cheese crisps 5.JPG
  • Enjoy this Jonas approved snack!  To make them last longer I stored them in an airtight container in the freezer and just pull them out as needed and microwavecarrot cheese crisps 6.JPG

    Ok I love all of these! I definitely need some ideas for Ryan and you can bet I am going to try these! The frozen yogurt blueberries I think will be a big hit!
